pink hair!
I spent an afternoon with a dear friend yesterday putting bits of pink in the front of her hair. it looks absolutely lovely and it's making me crave some pink hair of my own...

chocolate cookies
i set out to make some cookies with no refined sugar and a bit more nutritional value than your average cookie and i came up with these...they are absolutely delicious! a bit more fragile than your typical cookie, but if you need them to hold up better, you could use less almond meal and more flour. i imagine a minute in a plastic baggie tucked into a tote bag and these would be a bag of crumbs! for my part, i enjoy the delicate texture and will just refrain from traveling with these guys.
blend together:
1/2 cup almond meal
1/2 cup all purpose flour(i used gluten free, obviously)
1/2 cup oatmeal
1/2 cup cocoa powder
1 tsp baking soda
stir in:
1 egg
1/4 cup oil or butter(i used coconut oil)
1 cup honey
1 tsp vanilla
drop by the teaspoon full onto a lightly greased cookie sheet and bake in a preheated oven at 350 degrees for about 8 or 9 minutes(don't over bake, the honey will scorch quicker than typical sugar would)
cool and enjoy!

raspberry thumprint cookies!
i love love love thumbprint cookies! and these are extra awesome because not only are they gluten free and vegan(depending on your standards, they do have honey), but they are also free of refined sugar!
i know you must now be asking, "amy, how can i, too, make these morsels of goodness and delight?" so here is the recipe
2/3 cup honey
1/4 cup coconut oil
1 tsp vanilla
1 3/4 cup flour(i used king athur's gluten free all purpose baking mix)
a itty bitty pinch of baking soda
blend all your dry ingredients together...you may use a bit more or less flour depending on if you are using wheat flour or gf flour, i imagine. basically you just want it to feel like typical shortbread dough. roll tsp sized dollops of dough into little balls and create little dips with your thumb or finger. FILL WITH DELICIOUS JELLY! I used a great jelly from a brand called Crofters, it's free of gelatin and free of refined sugar, and truly just made of fruit, it's called "Just Fruit Organic Spread" in Raspberry, obviously.
Bake on an ungreased baking sheet at 350 degrees for about 8 minutes. don't over bake, they'd definitely dry out.
